  • In a bowl, combine the flour, water, and salt; whisk for two minutes (or one minute on speed five on an electric beater).
  • In a small bowl, dissolve 1 tablespoon of warm water in yeast.
  • Whisk for 30 seconds (or 15 seconds on speed 5) after adding the yeast mixture, sugar, and baking powder to the bowl.
  • For 15 to 30 minutes, or until the top is beautiful and frothy, cover with cling film or a plate and set in a very warm spot. It will only have a 10-15% increase in volume.

COOKING CRUMPETS:

  • Butter two or three rings (about 9 cm/3.5″ wide, but any ring or metal shaper would work, Note 3) (TIP: Apply melted butter to the nonstick rings. Everything else: spread some butter on it.
  • After lightly brushing the nonstick skillet with melted butter, add the rings.
  • Set the stove to medium-high (medium for powerful stoves) and heat it up (see “sizzle test” in Note 4).
  • Fill the rings with 1/4 cup (65ml) of batter, about 1cm (2/5″ deep; it will rise by about 60%).
  • After cooking for 1 1/2 minutes, bubbles should begin to form on the top, though they won’t burst quite yet.
  • After one minute of cooking over medium heat, some bubbles should appear around the edges.
  • Reduce the heat to medium-low and continue cooking for another 2 1/2 to 4 minutes, or until the surface is “set” and it is obvious that no more bubbles will continue to pop! (At this point, you can use a skewer to help the last bubble burst!)
  • Take off the rings (you may need to slide the knife around to make them loose).
  • Then, to achieve a flush of color, turn and cook the other side for 20 to 30 seconds.
  • Place golden side down on the writing rack and allow it to cool completely.
  • When cooled, it can be consumed, but the next day it tastes much better.

HOW TO EAT CRUMPETS:

  • Toast until the bottom is crispy in a toaster.

  • Just warm water from the faucet, not so hot that you could burn yourself, but warm enough that you would want to take a bubble bath in it.
  • 200ml = 200g (practical so you don’t have to measure out separately and can just pour in!)
  • Normal active dried yeast is what the original recipe calls for. I tried both immediate and rapid rise yeast, and they both work exactly the same.
  • I haven’t used fresh yeast, but I don’t see why it wouldn’t work with the typical ratio of 7.75g, or 0.275 ounces, of fresh yeast for every teaspoon of dry yeast. Follow the recipe exactly, crumbling into the warm water with the 1/2 tsp sugar.
  • Any round object, such as biscuit cutters, egg rings, or even an empty tuna can that has been cleaned (remove top and bottom, use labels, and grease well) can be used as this.
  • However, why limit yourself to rounds? This may be done with any cookie cutter!
  • Pan heat: The batter must sizzle gently when it strikes the pan; otherwise, it won’t be hot enough to cause bubbles. The crumpets will burn, though, if it gets too hot!

To test, place a dab of batter on the butter knife’s tip and press it against the skillet. Hot enough is sizzled. Wisps of smoke should not be emerging from the pan at this point because it is too hot.

COOKING TIP: For crumpets to succeed, heat management is essential! For the holes to start bubbling, you need to use more heat at first, then less so that the crumpet cooks through without burning the bottom, but still powerful enough for the bubbles to “pop.” If your stove is more powerful (like the portable one I use for movies), lower the temperature a little bit. Bubbles will first appear around the edges and later in the middle. The butter around the rings may smoke a little, but if it becomes quite smokey, the skillet is overheated. To remedy this, take the skillet off of the stove and let it cool down a little before putting it back on.

This will result in slightly fewer holes on the surface (thicker = fewer holes), but you can make them about 2.2 cm (just shy of 1″) thick, which looks very impressive and puffy. Some trendy bistros charge up to $20 for thick crumpets made in-house!
  • Using gluten-free flour won’t resolve this issue. I tried, but it was a miserable failure!
